Ingredients

1/3 cup BeeNZ Mānuka UMF 5+ Honey
Note: Kānuka Honey works beautifully as well -
1/3 cup maple syrup

4 tsp vanilla extract

1/2 tsp salt

1/2 cup oil of your choice

5 cups gluten-free old-fashioned rolled oats

1 cup walnuts, chopped

1 cup raw almonds, chopped

1/2 cup sunflower seeds

1/2 cup pumpkin seeds

1/4 cup sesame seeds
-
1/2 cup raisins
-
1/2 cup dates, chopped

1/2 cup dried cranberries
-
1/2 cup unsweetened coconut flakes
Instructions
Adjust oven rack to the upper-middle position. Heat oven to 165°C.
Line a baking tray with baking paper.
Whisk honey, maple syrup, vanilla, salt and oil in a large bowl.
Add the oats, almonds, walnuts, sunflower seeds, pumpkin seeds and sesame seeds to the liquid mixture and fold until thoroughly combined. Transfer the mixture to the baking tray and spread into an even layer. Using the back of a ramekin or spatula, press the mixture firmly to compact.
Bake for 30–40 minutes, rotating the tray once halfway through. Depending on your preferred level of toastiness, you may wish to bake for an additional 10–15 minutes. Remove from the oven and allow to cool completely for at least one hour.
Once cooled, break the granola into pieces and mix through the dried fruit and coconut.
Storage
Store in an airtight glass jar in the refrigerator for up to 5–10 days.
