Ingredients:
Crust:
- 1 1/2 cup almond flour
- 3 TBS tapioca starch

2 TBS BeeNZ Kanuka Honey (softened)
- 1/4 cup coconut oil, lightly melted
- 1/2 tsp vanilla
- 1/2 tsp salt
Filling:
- 3 large eggs
- 3/4 cup fresh squeezed lemon juice (about 3 large lemons)
- 1 cup date sugar
- 1 tsp lemon zest
Instructions:
- Preheat oven the oven to 325F/ 160C.
- Prep an 8x8"/20cm baking pan with parchment paper.
- Mix crust ingredients together.
- Lightly press crust ingredients into prepared pan.
- Bake for 20 minutes.
- Meanwhile whisk filling ingredients together.
- Poke small holes into crust and pour the filling over it.
- Bake for 25-30 minutes, or until the centre is not jiggly.
- Let cool completely (about 2 hours), then place in the refrigerator for another 2-3 hours to chill.
- Slice into bars and enjoy!
