Your tastebuds will love this quick and easy kale salad!
Ingredients:
- 2 cups fresh kale
- 1/2 finely chopped red onion
- 1/2 cup sundried tomatoes
- 1 avocado (in cubes)
- 1/2 cup parmesean cheese
- 2 tbsp olive oil or oil from sundried tomatoes
- Juice of 1 lemon
- 1 tsp freshly chopped garlic (measure with your heart!)
- 1 tsp BeeNZ Manuka Honey (blend or UMF range for extra health benefits)
- 1/2 tsp cayenne pepper
- Salt & Pepper
Instructions:
- Add kale & olive oil to a bowl. Ensure kale leaves are well coated in the oil.
- Add all other ingredients to the same bowl.
- Mix well until honey & garlic are well incorporated.
- Enjoy!
