Zingy Kale Salad

 

Your tastebuds will love this quick and easy kale salad!

 

Ingredients:

  • 2 cups fresh kale
  • 1/2 finely chopped red onion
  • 1/2 cup sundried tomatoes
  • 1 avocado (in cubes)
  • 1/2 cup parmesean cheese
  • 2 tbsp olive oil or oil from sundried tomatoes
  • Juice of 1 lemon
  • 1 tsp freshly chopped garlic (measure with your heart!)
  • 1 tsp BeeNZ Manuka Honey (blend or UMF range for extra health benefits)
  • 1/2 tsp cayenne pepper
  • Salt & Pepper 

Instructions:

  1. Add kale & olive oil to a bowl. Ensure kale leaves are well coated in the oil. 
  2. Add all other ingredients to the same bowl. 
  3. Mix well until honey & garlic are well incorporated.
  4. Enjoy!
